Breakfast of Cavemen

Yes, a Paleo post. Now, I will not harangue you on Paleo living (you can learn more here if so inclined: Why Paleo?), but I will be sharing my breakfast that was fabulously delicious. I admit I am not a devout Paleolithic eater and primarily only (strictly) follow it in lieu of fasting every several months. Quite honestly though, I really should ~ I feel exponentially healthier when I do. What is it about eats laden with sugar that is nearly impossible to resist? Oh yeah, they’re yummy. :: sigh::  In all seriousness, I’m a “perimeter” shopper at the grocer and 93%  dedicated to smart dietary choices. Enough about me, let’s talk breakfast: (adapted from Paleo Plan ~ and home to the best Paleo recipes I’ve come across yet.) Of course you may incorporate various ingredients to fulfill the desires of your little heart.


  • 3 strips nitrite-free bacon
  • Bacon fat for brushing tins
  • 3 eggs
  • Pepper
  • Chopped onions (sautéed in the bacon fat)


  1. Preheat oven to 350°.
  2. Cook bacon in a skillet over medium heat until it begins to shrivel. (about 3 minutes)
  3. Chop onions and sauté in pan with bacon. Remove from heat.
  4. Brush 3 cups in a muffin tin with the bacon fat.
  5. Circle the inside of each cup with a strip of bacon.
  6. Break an egg into each muffin cup and season with pepper.
  7. Add onions.
  8. Fill empty cups with water to protect from burning.
  9. Bake in the oven for 20 minutes.
  10. To serve, loosen the edges of the eggs with spatula and transfer to plate.

The Skinny

Yeah…I’m back into all of my old clothes. You know, the ones that have either been tight as all hell or “yeah, good luck pulling those up over your ass?”

One word: Paleo

It’s ridickerous to say the very least. I strictly adhered for two solid weeks…now, it’s maintenance and moderation.

I’m happy beyond words.
